 Salt1 Teaspoon
 Celery - 1 stalk, julienned

 Carrot1 Large, julienned

 Tomato Coulis
 Tomatoes2 Cup (16 tbs)
 Garlic2 Clove (5gm)
 Red pepper flakes1 Teaspoon
 Yellow crookneck squash -1, julienned
 Olive oil1 Tablespoon
 Garlic2 Clove (5gm)
 Black pepper1 Teaspoon
 Salt To Taste
 Cider vinegar1 Tablespoon
 Basil1 Teaspoon, dried
 Salt To Taste
 Pepper To Taste

Directions

MAKING
1. In a cooking pot add water and salt. Boil.
2. Stir the millet in the water. Lower the heat and simmer 45 minutes keeping the pot covered.
3. Steam vegetables till they are tender and crispy.
4. In a skillet add olive oil and warm it.
5. Mix garlic and stir well.
6. Add vegetables and black pepper. Stir well so that the vegetables are well coated with oil.
7. Season well with salt. Keep it aside.
8. In a pan add garlic, red pepper flakes, vinegar, basil and tomatoes. Simmer 15 minutes till the coulis is thick enough.

FINALIZING
9. Adjust the seasonings.
10. Place all the vegetables around the millet. Make a depression in the central section on tomato coulis.

SERVING
11. Serve Millet In A Nest Of Vegetables With Tomato Coulis immediately.
