Millet Fruit and Vegetable Salad Recipe
Ingredients
| Corn | 1/2 Cup (16 tbs) | |
| Millet | 1 Cup (16 tbs) | |
| Sweet red pepper | 1/2 To taste, chopped | |
| Banana | 1 Large, cubed | |
| Lemon juice | 2 Teaspoon | |
| Walnuts | 2 Tablespoon, chopped | |
| Sunflower seeds | 2 Tablespoon, toasted | |
| 1/4 cup Lemon Vinaigrette Dressing | ||
| Spinach leaves | 4 | |
Directions
MAKING
1) In the water, briefly simmer the corn covered until tender.
2) Mix with pepper and millet.
3) Toss the banana in lemon juice.
4) Combine corn mixture and banana.
5) Add sunflower seeds and nuts.
6) Add enough dressing to moisten the ingredients and toss the salad in it.
SERVING
7) Serve the salad on a bed of spinach leaf arrangement.
