Directions
Wipe with absorbent paper.
Mix together the flour, salt, pepper and turmeric.
Roll each piece of chicken in this mixture until well coated.
Place the butter or bacon fat in an 8 x 8-inch (20 X 20 cm) microwave-safe dish and melt 5 minutes at HIGH; the butter will brown, the bacon fat will be very hot.
Place the chicken pieces skin-side down in the fat.
Brown 8 to 10 minutes at HIGH.
Turn pieces, then microwave at MEDIUM-HIGH 8 to 10 minutes.
Remove chicken to a warm dish.
Cover and let stand while making the sauce.
To make the sauce: Add the flour to the fat in the dish, mix well, scraping brown pieces.
Add the milk, mix well.
Microwave 4 to 6 minutes at HIGH, stirring twice.
When creamy, salt and pepper to taste, then pour over the chicken.
Serve.
