Mile High Apple Pie Recipe

Ingredients
1 tbsp light cream 15 mL
1 tsp granulated sugar 5 mL
FILLING:
8 cups sliced peeled apples 2L
3/4 cup granulated sugar 175 mL
3 tbsp all-purpose flour 50 mL
2 tsp coarsely grated orange rind 10 mL
1/4 tsp nutmeg 1 mL
1-1/2 tsp butter 7 mL
1-1/2 tsp orange juice 7 mL
Directions
On lightly floured surface, roll out half of the pastry and fit into deep 9-inch (23 cm) pie plate.
Filling: In large bowl, toss together apples, sugar, flour, orange rind and nutmeg; spoon into prepared pie shell.
Dot with butter; sprinkle with orange juice.
Roll out top pastry.
Moisten rim of shell and cover with top pastry.
Trim and flute edge.
Brush lightly with cream and sprinkle with sugar.
Cut steam vents in top.
Bake in 425°F (220°C) oven for 20 minutes; reduce heat to 375°F (190°C) and bake for 35 to 40 minutes longer or until apples are tender and pastry is golden
