Mile High Lemon Pie Recipe

Prepare Mile High Lemon Pie at your home using this wonderful recipe. My children love this Pie so much that I have ended making them at least once in a month! Try this Mile High Lemon Pie for yourself and you will understand why they love it so much!

Ingredients

 
1 envelope unflavored gelatine
 
1/2 c. cold water
 
1 cup sugar, divided
 
1/2 c. lemon juice
 
5 eggs separated
 
1 tsp. grated lemon rind
 
9 inch baked pie shell

Directions

1. Mix gelatine and 1/2 c. sugar in top of double boiler.
2. Beat egg yolk slightly, stir in water and lemon juice.
3. Add to gelatine mixture and cook over hot water, stirring constantly till gelatine is dissolved and mixture slightly thickened.
4. Add lemon rind, chill until mixture is slightly thicker than unbeaten egg white.
5. Beat egg whites until stiff, adding sugar gradually.
6. Beat until very stiff, gradually fold into gelatine, pile into shell, and chill until firm.
7. May be garnished with whipped cream, nuts or fresh fruits.
