1 Cup Apricot Puree
1 Cup Buttermilk
1/4 Cup Safflower Oil
1/2 Cup Dark Brown Sugar
2 Eggs
1 Tsp. Almond Extract
1 3/4 Cups Unbleached Flour
1 Cup Diced, Dried Apricots
1 Tbsp. Baking Powder
1 Tsp. Soda
1 Tsp. Salt
1/2 Cup Ground Almonds
Directions
Whisk together the first six ingredients.
Combine the remaining six ingredients well, being sure the diced apricots are separated and covered with flour.
Make a well and pour the liquid in, stirring quickly.
Spoon into prepared muffin pans, filling almost full.
Bake until lightly brown on top.
Bake at 400 degrees 18 to 20 minutes
