Middle Eastern Fruity Dip Recipe
Ingredients
| Shallots | 2 Small, finely chopped | |
| Garlic | 2 Clove (5gm), crushed | |
| Olive oil | 2 Tablespoon | |
| Curry powder | 2 Teaspoon | |
| Pepper | 2 Tablespoon, seasoned | |
| 2 tbsp. tomato paste diluted in equal amount of water | ||
| Lemon juice | 2 Tablespoon | |
| Apricot jam | 1 Tablespoon | |
| 1/2 cup Basic Mayonnaise | ||
Directions
Cook shallots and garlic in oil.
When soft, add curry powder, pepper, tomato paste, lemon juice and jam.
Simmer for 4 to 5 minutes.
Place in a blender and process until smooth or press through a sieve.
Let cool.
Add the mayonnaise.
Mix well.
Chill.
