Ingredients

 Shallots2 Small, finely chopped
 Garlic2 Clove (5gm), crushed
 Olive oil2 Tablespoon
 Curry powder2 Teaspoon
 Pepper2 Tablespoon, seasoned
 2 tbsp. tomato paste diluted in equal amount of water
 Lemon juice2 Tablespoon
 Apricot jam1 Tablespoon
 1/2 cup Basic Mayonnaise

Directions

Cook shallots and garlic in oil.
When soft, add curry powder, pepper, tomato paste, lemon juice and jam.
Simmer for 4 to 5 minutes.
Place in a blender and process until smooth or press through a sieve.
Let cool.
Add the mayonnaise.
Mix well.
Chill.
