Microwave Parsley-And-Lemon Sole Roll-Ups Recipe
Ingredients
1 tbsp butter 15 mL
1 onion, chopped
1 clove garlic, minced
1/2 cup fresh bread crumbs 125 mL
1/3 cup chopped fresh parsley 75 mL
2 tbsp lemon juice 25 mL
1 tsp grated lemon rind 5 mL
1/4 tsp salt 1 mL
Pinch pepper
4 sole fillets (about 1 lb/500 g)
Directions
In 4-cup (1 L) microwaveable measure or bowl, microwave butter at High for 30 seconds or until melted.
Add onion and garlic; microwave at High for 1 to 2 minutes or until softened, stirring once.
Stir in bread crumbs, 1/4 cup (50 mL) of the parsley, 1 tbsp (15 mL) of the lemon juice, lemon rind, salt and pepper; spread evenly over fillets.
Starting at narrow end, roll up fillets jelly-roll style; secure with toothpicks.
Arrange roll-ups in circle around outside of shallow microwaveable dish; sprinkle with remaining lemon juice.
Cover and microwave at High for 4 minutes or until fish flakes easily when tested with fork.
Sprinkle with remaining parsley.
