Ingredients
| 3 or 4 leeks 3 or 4 | ||
| 4 boneless skinless chicken breasts | ||
| Ground pepper | 1 To taste | |
| Butter | 2 Tablespoon | |
| Pinch dried tarragon Pinch | ||
| Salt | To Taste | |
Directions
Discard tough green parts of leeks, keeping at least 2 inches (5 cm) of light green parts.
Cut lengthwise into white part of each leek and wash under cold running water.
Cut into 1/2 inch (1 cm) slices.
In baking dish just large enough to hold chicken in single layer, sprinkle half the leeks.
Cover with chicken breasts and season lightly with salt and pepper.
Top with remaining leeks and dot with butter.
Sprinkle with tarragon, and salt and pepper to taste.
Cover with plastic wrap, turning back 1 corner to vent; microwave on High for 8 to 10 minutes or until chicken is no longer pink.
