Microwave Sweet Potato Puree With Apples Recipe
Ingredients
1 tbsp butter
1 small onion, chopped
2 lbs sweet potatoes, (about 3) peeled and cut into 1 1/2-inch (4 cm) chunks
2 apples, peeled, cored and chopped
1/4 cup maple syrup
Directions
1. In casserole dish, combine butter and onion; microwave at High for 2 minutes or until onion is softened. Add sweet potatoes and apples; drizzle with maple syrup. Cover and microwave at High for 20 to 25 minutes, stirring once, until sweet potatoes are very tender.
2. In a food processor, puree in batches until smooth. Place in a serving dish; season with salt, pepper and nutmeg to taste.
