 Spanish onion1 Large
 Water1/4 Cup (16 tbs)
 Veal sausage - 1 1/2 ounces, cooked and crumbled
 Bread crumbs3 Tablespoon, seasoned
 Pine nuts1/4 Ounce, toasted
 Currants1 Tablespoon, dried
 Egg white1
 Parmesan cheese 2 Teaspoon, grated
 Parsley1 Teaspoon, chopped
 Salt1/4 Teaspoon

Directions

MAKING
1) In a 1-quart ovenproof casserole, place the onion halves, cut side facing down.
2) On top, add water.
3) With a vented plastic wrap, cover and on high power, microwave for 4 minutes, or until the onion turns tender-crisp. Remember to rotate the casserole halfway through the cooking. Keep it aside and cool for a while.
4) In a medium sized mixing bowl, add the sausage, bread crumbs, pignolias, currants, egg white, 1 teaspoon of cheese, parsley and salt. Mix thoroughly and keep aside.
5) Now, drain the cooled onion halves and discard the liquid.
6) With a small spoon, scoop out the center of each onion half, leaving 3/4-inch thick shells. Reserve the scooped out portion.
7) Now, finely dice the onion centers.
8) To the sausage mixture, add this and mix well.
9) Into each onion shell, spoon half of the onion-sausage mixture.
10) Over this stuffing, divide and add the remaining cheese evenly.
11) In the same casserole, place the stuffed onions.
12) On medium-high (70%) power, microwave uncovered for 5 minutes, or until heated through. Rotate the casserole halfway through the cooking.

SERVING
13) Serve the Stuffed Onion along with mashed potatoes or pork chops for a real treat.
