Microwave Peanut Brittle Recipe
Ingredients
| 1 cup raw peanuts | ||
| Granulated Sugar | 1 Cup (16 tbs) | |
| 1/2 cup white corn syrup | ||
| Salt | 1/8 Teaspoon | |
| Butter | 1 Teaspoon | |
| Vanilla extract | 1 Teaspoon | |
| Soda | 1 Teaspoon | |
Directions
Combine peanuts, sugar, syrup and salt in 2 quart casserole.
Microwave 7-8 minutes, stirring well after 4 minutes.
Stir in butter and vanilla, blend well, microwave 1-2 minutes.
Syrup will be very hot and the peanuts lightly browned.
Add baking soda, stir gently until light and foamy throughout.
Pour onto lightly buttered cookie sheet.
Let cool enough to handle, pull to thin out.
Let cool thoroughly before breaking into bite-size pieces.
