Microwave Omelette Recipe

3 eggs, separated
1/2 cup sour cream
2 tsp green onion, sliced
2 tsp tomato flesh
1 tsp parsley, snipped
1/2 cup ham, cooked and diced
Salt and pepper to taste
Directions
Beat egg whites in a bowl until stiff; set aside.
In another bowl, beat egg yolks until very thick and creamy; beat in the sour cream.
Stir in the remaining ingredients.
Season with salt and pepper to taste.
Gently fold in the beaten egg whites.
Place mixture in a 9- or 10 in. (23 or 25 cm) lightly greased pie pan; cover lightly with plastic wrap (make sure there is enough room for the eggs to expand).
Cook in microwave on medium for 5 minutes, turning dish a half turn every minute.
Allow to rest 1 1/2 minutes before serving.
