Microwave Enchilada Pie Recipe
Ingredients
| Lean ground beef | 1 pound | |
| Onion | 2 Tablespoon, chopped | |
| Cheddar Cheese | 1 1/2 Cup (16 tbs), divided | |
| Green chilies - 1 can (4-ounces), diced | ||
| Tomatoes - 1 can (6-ounces), chopped | ||
| Corn chips - 1/2 package (9 1/2-ounces) | ||
| Hot chili powder | 1 Teaspoon | |
| Lettuce | 1 Cup (16 tbs), shredded | |
| Tomato | 1 Large, sliced | |
| Salt | To Taste | |
Directions
MAKING
1. In glass casserole, cook ground beef and onion on ROAST (7) for 6 minutes until beef is no longer pink and drain.
2. Stir in 1 cup cheese, chilies, canned tomatoes and corn chips.
3. With cover cook on REHEAT (8) for 6 minutes or until hot.
4. Sprinkle remaining 1/2 cup cheese on top and continue cooking on REHEAT (8) for 3 minutes until cheese melts.
SERVING
5. Garnish with shredded lettuce and sliced tomato and serve.
