| Whole Kernel Corn - 1 can, drained OR Frozen Whole Kernel Corn - 1 packet, defrosted | ||

| Pimientos | 1 Tablespoon, chopped | |
Directions
MAKING
1) Into a 1 to 1 1/2-quart casserole, add in sugar, cornstarch, dry mustard, salt and cayenne pepper.
2) Stir in the vinegar.
3) Microwave the casserole on HIGH for about 4 minutes till the sauce starts to thicken slightly and boil at the same time.
4) Next, add in the drained or defrosted corn, onion, chopped green pepper and chopped pimientos.
5) Let the mixture cool down slightly before refrigerating for about 6 hours. The flavors will blend better the longer you refrigerate the relish, like overnight.
SERVING
6) Serve the Corn Relish cold on the side with grilled meat or vegetables.You may even serve this as an appetizer with tortilla chips.
