| Dry white wine | 1/2 Pint | |

| Black peppercorns | 1 | |
| Carrot | 1 , quartered | |
| Onion | 1 , quartered | |
| Chicken stock | 1/2 Pint | |
| Cornflour | 2 Tablespoon | |
Directions
MAKING
1) In a large microwavable casserole, place the chicken and dredge over the tarragon and seasoning.
2) Stream the wine and add bay leaves, peppercorns, carrot, onion and chicken stock, to the casserole.
3) Put the lid on and cook for 30 minutes.
4) Leave to stand for about 20 minutes.
5) Arrange the chicken on a warm serving dish.
6) Pass the sauce through strainer.
7) Pour the strained liquid to the casserole.
8) In a small cup, place the cornflour with a little water and mix to smooth paste.
FINALIZING
9) Heat the sauce and stir in the cornflour mixture, heat for 6 minutes, stirring occasionally, until thickened.
10) Taste and season if needed.
11) Adjust seasoning if necessary.
SERVING
12) Spoon the hot sauce over the carved chicken, serve hot.
