Mexico Blue Corn Muffins Recipe

Ingredients
1 1/2 Cups Blue Corn Meal
1/2 Cup Unbleached Flour
3 Tsp. Baking Powder
1 Tsp. Soda
1/4 Tsp. Salt
2 Eggs
1 Tbsp. Honey
1 Tbsp. Oil
1 Cup Buttermilk
Directions
Mix together blue corn meal, flour, baking powder, soda and salt in a large bowl.
In another bowl, whisk eggs with honey, oil and buttermilk.
Make a well in the dry ingredients and quickly stir in the liquid, stirring not more than 10 seconds.
Batter will be thin.
Spoon into greased muffin tins and bake until lightly brown.
Muffins will be crusty on the outside, tender and blue inside.
Serve warm with butter.
Bake at 375 degrees 18-20 minutes
