Mexican Rice Casserole Recipe

The mexcan rice casserole is prepared with uncooked rice and bacon. Prepared with onions and meat browned and cooked with tomatoes, rice and chili, seasoned together, the mexican rice casserole is simmered together till rice is done.

Ingredients

 
2 slices bacon
 
1 large onion, chopped
 
2 green peppers, chopped
 
3/4 lb. ground round steak
 
3 cups canned tomatoes
 
1/2 cup raw rice
 
1 tsp. chili powder
 
1 1/2 tsp. salt
 
1/4 tsp. pepper
 
Mushrooms if desired

Directions

Cut bacon in pieces.
Fry.
Remove from pan.
Brown chopped onions, chopped pepper and meat in pan.
Add tomatoes, rice, chili, salt and pepper.
Stir together.
Cover.
Simmer 1/2 hour to 1 hour until rice is tender.
Add a little water if needed.
Chili and green pepper may be omitted if desired.
