Mexican Rice Recipe

Ingredients

 
4 tablespoons oil
 
1 small can mushrooms, drained
 
1 medium onion, chopped
 
1 green pepper, chopped
 
2 cups canned tomatoes, drained
 
1/2 cup water or beef stock
 
1 cup uncooked rice
 
2 tablespoons chopped parsley
 
1 1/2 teaspoons salt
 
Dash of pepper
 
1/2 teaspoon oregan

Directions

Heat oil in large skillet.
Add mushrooms, onion, and green pepper; cook until onions are lightly tanned.
Add tomatoes and water.
When mixture has come to a boil, but not boiled, add rice and seasonings.
Cover; simmer for 30 minutes, until rice is tender and most of the liquid has been absorbed.
