Mexican Rabbit Recipe
Ingredients
2 tablespoonfuls butter or margarine
2 cupfuls grated cheese
3 tablespoonfuls chopped, green pepper
2 cupfuls stewed tomatoes
2 eggs, separated
2 tablespoonfuls finely chopped onion
1/2 teaspoonful salt
1 cupful milk
2 tablespoonfuls flour
Toasted crackers or bread
Directions
Melt the butter, add the green pepper and onion and simmer 5 min. or until tender.
Add the flour, stir until smooth, then add the milk.
When blended add the cheese, stirring until melted; then add the tomatoes.
Add next the beaten egg yolks and seasoning.
Last, fold in the egg whites, stiffly beaten.
Turn into a greased casserole and bake in a moderate oven of 350° F. for 30 min.
Serve on toasted crackers or bread.
