Directions
Season with salt and pepper.
Top each chop with a green pepper ring; fill each ring with 1 tablespoon rice.
Carefully pour 1/4 cup stewed tomatoes on rice in each ring.
Pour remaining tomatoes into skillet.
Cover tightly; simmer 1 hour or until done.
Add a small amount of water if necessary.
