Mexican Pancakes Recipe

Ingredients
| Flour | 3 Cup (16 tbs) | |
| Sugar | 1 Tablespoon | |
| Baking powder | 1 Teaspoon | |
| Salt | 1 Teaspoon | |
| Eggs | 4 standard | |
| Milk | 1 Cup (16 tbs) | |
| Butter/Margarine | 4 Tablespoon, melted | |
| Cold water | 1/4 Cup (16 tbs) | |
| Fat for deep frying | ||
| Golden thick honey | ||
Directions
Mix dry ingredients in a large bowl.
Add eggs, milk, and butter, stirring well after each addition.
Add cold water 1 tablespoon at a time until dough can be kneaded easily.
Turn dough onto a floured board; knead several times.
Then divide dough into 2-inch balls, cover and let stand for 20 minutes.
Roll out each ball into a thin, round pancake.
Let stand 5 minutes more.
Heat oil in medium skillet, fry pancakes a few at a time.
When golden brown, drain on paper towels and keep them warm.
Serve covered with thick honey.
