Mexican Mocha Muffins Recipe
Mexican Mocha Muffins are amazing muffins which you really have to try at home. I served it for a party last weekend and the guests loved it. Try this Mexican Mocha Muffins and you will understand why.
Ingredients
1 Cup Boiling Water
2 Tbsp. Instant Coffee
3 Tbsp. Unsweetened Chocolate Cocoa Mix
2 Tbsp. Vanilla
1/2 Cup Kahlua
2 2/3 Cups Flour
1 1/2 Tsp. Baking Powder
1 Tsp. Soda
1/2 Tsp. Salt
1 Cup Sugar
1 Cup Chopped Pecans
2 Eggs
3 Tsp. Butter, Melted
3/4 Cup Buttermilk
Directions
Boil water and add to instant coffee and cocoa to make one cup, stirring well.
Add vanilla and Kahlua to the coffee mixture.
Set aside.
Sift together flour, baking powder, soda, salt and sugar in large bowl.
Stir in pecans.
In small bowl, whisk eggs, melted butter and buttermilk.
Stir in coffee mixture, blending well.
Make a well in the dry ingredients and add the liquid, stirring quickly and lightly.
Spoon batter into greased muffin cups and bake until done.
Bake at 400 degrees 20 to 25 minutes
