Mexican Mini Lasagna Recipe
Ingredients
6 ounces miniature lasagna noodles
1 pound ground beef
1 envelope taco seasoning mix
1 (15 ounce) can diced tomatoes
1 cup ricotta cheese
1/4 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
Directions
Pour 3 cups of water into a medium saucepan over high heat; bring to a rapid boil.
Add the miniature lasagna noodles and cook for about 10 minutes or until done, stirring frequently; drain.
Brown the ground beef in a large skillet over medium heat, stirring until crumbly; drain.
Stir in the taco seasoning, 1/2 cup water and tomatoes; bring to a boil.
Reduce heat and simmer for about 10 minutes, stirring occasionally.
Stir in the ricotta cheese and Parmesan cheese.
Stir in the cooked lasagna; heat through.
Sprinkle mozzarella cheese over the top and allow to melt.
