Mexican Flan,Muffins Recipe
Ingredients
1/2 Cup Sugar
1 1/4 Cups Boiling Water
2 Cups Unbleached Flour
3 Tsp. Baking Powder
1/2 Cup Sugar
2 Eggs, Beaten
1 Cup Evaporated Milk
2 Tsp. Vanilla Extract
3 Tbsp. Butter, Melted
Directions
Grease muffin tins.
Caramelize one-half cup sugar by cooking in large saucepan until melted and golden brown, stirring as needed.
Slowly and carefully add 1 1/4 cups boiling water and stir until blended.
Pour one tablespoonful into greased muffin tins.
Set aside.
Mix together flour, baking powder and sugar.
Whisk eggs, evaporated milk, vanilla and melted butter together.
Blend with dry ingredients, mixing lightly.
Spoon batter into muffin tins and bake until done.
After muffins cool for two minutes, gently remove from pans and place upside down on serving tray.
Bake at 375 degrees 20 to 22 minutes
