Mexican Corn Muffins Recipe
Mexican Corn Muffins are a delicious and unique muffin. I have a sweet tooth and this dish is one of my favorites! Try this Mexican Corn Muffins recipe and you will understand why.
Ingredients
1/2 Cup Butter, Melted
1 1/4 Cups Buttermilk
2 Eggs
1 Cup Flour
1 Cup Cornmeal, Finely-Ground
1/2 Tsp. Salt
1/2 Cup Sugar
3 Tsp. Baking Powder
1 Tsp. Baking Soda
1 Can Mexicorn, Well Drained
Directions
In a small bowl, whisk melted butter, buttermilk and eggs well.
In large bowl, sift together the flour, cornmeal, salt, sugar, baking powder, soda and drained Mexicorn.
Quickly stir buttermilk mixture into dry ingredients.
Batter will be lumpy.
Spoon into greased muffin tins filling three-fourths full.
Bake until brown.
Bake at 400 degrees 20 to 25 minutes
