1 tablespoon apple cider or red wine vinegar
2 tablespoons mole sauce
3 tablespoons vegetable oil
1 8 ounce can crushed pineapple packed in juice, drained, juice reserved
1 teaspoon tomato paste
1/8 teaspoon celery seeds
1/2 cup commercial sour cream
1 1/2 pounds white or green cabbage, cored and finely shredded
1 large green pepper, seeds and membranes removed, minced
1 cup thinly sliced radishes
Salt and freshly ground black pepper to taste
Directions
In a small bowl, combine the vinegar and mole sauce, stirring to blend well.
Whisk in the vegetable oil, reserved pineapple juice (approximately 2 tablespoons), tomato paste, celery seeds, and sour cream, cover, and refrigerate while preparing the vegetables.
Combine the cabbage, pepper, radishes, and pineapple in a large bowl.
Spoon the sauce on top, season with salt and pepper, and toss to blend.
