Mexican Chicken Recipe

Ingredients
4 tablespoons fat-free chicken broth
3 large cloves garlic, chopped
11/2 cups chopped onion
1 cup diced red pepper
1 pound boned, skinless chicken breast meat, cut into 1 inch pieces
1 can (15 ounces) no salt stewed tomatoes, drained
1 can (15 ounces) fat-free chili
1/4 teaspoon chili powder
dash of cayenne pepper (optional)
2 cups small broccoli florets, steamed
2 tablespoons chopped cilantro (optional)
Directions
1. Heat 4 tablespoons broth in large skillet over medium-high heat.
2. Stir-fry garlic, onion, pepper and chicken for about 10 minutes, until chicken is cooked.
3. Stir in drained stewed tomatoes, chili, chili powder and cayenne pepper.
4. Bring mixture to a boil.
5. Cover, and reduce heat, simmer for about 8 minutes to allow the flavors to blend.
6. Stir in steamed broccoli and simmer for an additional 2 minutes.
7. Remove from heat.
8. Garnish with chopped cilantro if desired and serve.
