Mexican Bean Dish Recipe
Ingredients
| Ground beef | 1 Pound | |
| Red beans | 1 Can (10oz) | |
| 1 15-oz. can enchilada sauce, mild | ||
| Tomato sauce | 1 8 Ounce | |
| Instant minced onion | 1 Tablespoon | |
| 1 6-oz. pkg. corn chips | ||
| Shredded Cheddar cheese | 2 Cup (16 tbs) | |
| Dairy sour cream | 1 1/2 Cup (16 tbs) | |
Directions
Brown beef in skillet.
In mixing bowl, combine beans, enchilada sauce, tomato sauce andonion.
Set aside 1 cup corn chips and 1/2 cup cheese.
Add remaining chips, cheese and meat to beans.
Stir to blend.
Pour into 2-quart casserole and bake at 375 degrees for 20 to 25 minutes, uncovered.
Remove from oven and spread top with sour cream and remaining chips and cheese.
Bake for an additional 3 to 4 minutes.
