Mexican B.L.T. Appetizers Recipe
These mexican BLT appetizers are parepared with canadian style bacon and served on english muffins along with veggies and mayonnaise. Broiled along with bacon, tomato, cilantro and onions, these mexican appetizers are fun to serve.
Ingredients
8 slices Canadian style bacon or 12 slices lower salt bacon
1 1/2 cups chopped seeded tomatoes
3 4 tbs. chopped onion
3 4 tbs. chopped fresh cilantro leaves
1/4 cup fat free mayonnaise
4 English muffins split and lightly toasted
1 cup shredded Monterey jack cheese with peppers
Directions
Preheat broiler.
Heat Canadian style bacon in large skillefrover medium heat until warm.
(If using bacon, cook in large skillet over medium heat until crisp.Drain on paper towels.)
Cut each slice in half.
Set aside.
Meanwhile in medium bowl, combine tomato, onion and cilantro.
Spread mayonnaise; on muffins.
Place muffins on baking sheet.
Top with tomato mixture, reserved bacon and the cheese.
Broil 3 4 inches from heat source about 2 minutes or just until cheese melts.
