Mexican Style Meat Loaf Recipe

Ingredients
1 beaten egg
1/2 cup cornmeal
1/2 cup chopped onion
1/4 cup chopped green sweet pepper or one 4 1/2-ouncecan diced green chili peppers, drained
1 7 1/2 ounce can whole tomatoes, cut up
1 to 2 teaspoons chili powder
1/2 teaspoon salt
1/2 teaspoon ground sage
1/4 teaspoon black pepper
1 pound ground pork
1 pound lean ground beef
Hot-style catsup or salsa catsup (optional)
Directions
1 In a large mixing bowl combine the egg, cornmeal, onion, sweet pepper or chili peppers, undrained tomatoes, chili powder, salt, sage, and black pepper. Add pork and beef; mix thoroughly. Shape into a 9x5-inch loaf in a shallow baking pan.
2 Bake meat loaf in a 350° oven about 1 1/4 hours or until juices run clear. If desired, serve with hot-style or salsa catsup.
