Mexican Strata Recipe
Ingredients
| 5 slices white bread or whole wheat bread,cubed | ||
| Eggs | 3 | |
| Milk | 1 Cup (16 tbs) | |
| Plain yogurt | 1/2 Cup (16 tbs) | |
| Shredded monterey jack cheese | 1/2 Cup (16 tbs) | |
| Shredded sharp Cheddar cheese | 1/3 Cup (16 tbs) | |
| 1/3 cup finely chopped green or red sweet pepper | ||
| Salsa | 3/4 Cup (16 tbs), prepared | |
Directions
Spread bread cubes evenly in a greased 8x 1 1/2-inch round baking pan.
Set aside.
In a medium bowl beat together eggs, milk, and yogurt.
Stir in Monterey Jack cheese, cheddar cheese, and green pepper.
Pour the egg mixture over bread cubes in baking pan.
Cover and refrigerate for 2 to 24 hours.
Uncover pan before cooking.
