Mexican Rarebit Recipe
Ingredients
| Butter, 2 to 3 tablespoons | ||
| Green chillies | 2 Tablespoon, finely chopped | |
| Onion | 1 , finely chopped | |
| Cooked corn, 1 cup | ||
| Cooked tomatoes, 1 cup | ||
| Bread pieces, 1/4 inch cubes, 1 cup | ||
| Salt | 1 Teaspoon | |
| Pepper | 1/2 Teaspoon | |
| Sugar | 2 Tablespoon | |
| Cheese | 1 Cup (16 tbs), grated | |
Directions
Melt some butter in a frying pan and brown bread pieces slightly.
Melt remaining butter in a pan and fry onion and chillies; cook over low heat until soft and slightly browned.
Add cheese and continue stirring constantly, cooking until cheese melts slightly (2 minutes).
Add remaining ingredients and heat thoroughly.
