Mexican Potato Soup Recipe
Ingredients
| 3 bacon strips, cut into small strips | ||
| 3 large or medium-size potatoes, peeled and cubed | ||
| 5 cups water or more | ||
| Tomato sauce | 1 Cup (16 tbs) | |
| Onion | 1/4 Cup (16 tbs), chopped | |
| Salt | 1 1/2 Teaspoon | |
| Whole green chiles | 10 Ounce, chopped | |
| 1/2 pound sharp cheese, grated | ||
Directions
1 Brown the bacon in a large kettle. Add the potato cubes and stir until they are coated with drippings.
2 Add the water, tomato sauce, onion and salt. Reduce heat to a simmer and cook for 1 hour.
3 Place the green cilantro and grated cheese in 6 soup bowls. Spoon hot soup over them.
