Mexican Pizza Sandwich Recipe
Ingredients
| Tomatoes | 2 Medium, chopped | |
| Onion | 1/4 Cup (16 tbs), chopped | |
| Green chili peppers | 1 Tablespoon, chopped | |
| Garlic powder | 1/4 Teaspoon | |
| Ground cumin | 1/4 Teaspoon | |
| Oregano leaves | 1/4 Teaspoon | |
| Basil leaves | 1/4 Teaspoon | |
| Salt | 1 Dash | |
| Cayenne pepper | 1 Dash | |
| 2 slices firm bread, toasted | ||
| Shredded mozzarella cheese | 2 Tablespoon | |
Directions
In 1 - qt.
casserole combine tomatoes, onion and chili peppers.
Microwave at High 5 to 6 minutes, or until tomatoes are tender, stirring after half the time.
Drain.
Stir in seasonings.
Arrange toasted bread in bottom of 8 x 8 -in baking dish or on serving dish.
Place half of tomato mixture on each slice.
Top each with 1 tablespoon cheese.
Microwave at High 1 to 2 minutes, or until cheese melts.
Rotate sandwiches once during cooking.
