Ingredients

 2 tablespoons bacon drippings
 18 ounces, or 2 1/2 cups, canned golden hominy, well drained
 1 medium-size onion, chopped
 Canned tomatoes1 1/4 Cup (16 tbs)
 1 cup Red Chile Sauce
 Salt To Taste
 1/2 pound Monterey Jack or Cheddar cheese, grated

Directions

1 Melt the bacon drippings in a large skillet and add the drained hominy and onion.
2 Saute for 6 to 8 minutes. Add the tomatoes and allow to cook until the mixture no longer looks watery.
3 Add the chile sauce and stir well. Season with salt to taste. Just before serving, stir in the cheese and cook until it melts.
