Mexican Hominy Recipe
Ingredients
| 2 tablespoons bacon drippings | ||
| 18 ounces, or 2 1/2 cups, canned golden hominy, well drained | ||
| 1 medium-size onion, chopped | ||
| Canned tomatoes | 1 1/4 Cup (16 tbs) | |
| 1 cup Red Chile Sauce | ||
| Salt | To Taste | |
| 1/2 pound Monterey Jack or Cheddar cheese, grated | ||
Directions
1 Melt the bacon drippings in a large skillet and add the drained hominy and onion.
2 Saute for 6 to 8 minutes. Add the tomatoes and allow to cook until the mixture no longer looks watery.
3 Add the chile sauce and stir well. Season with salt to taste. Just before serving, stir in the cheese and cook until it melts.
