Mexican Fried Rice Recipe
Ingredients
| Rice grain | 1 Cup (16 tbs) | |
| Hot water | 1 1/2 Cup (16 tbs) | |
| Bacon Slices | 6 , chopped | |
| 1 can condensed consomme | ||
| Seasoned tomato sauce | 1 8 Ounce | |
| Green pepper | 1/4 Cup (16 tbs), chopped | |
| Onion | 1/4 Cup (16 tbs), chopped | |
| Garlic | 1 Clove (5gm), minced | |
| Cumin seed | 1/2 Teaspoon | |
Directions
Soak rice in hot water 25 minutes; drain; let stand to dry, about 1 hour.
Cook bacon till crisp; remove bacon.
Add rice to drippings and cook till rice is lightly browned.
Add bacon and remaining ingredients.
Cover, and cook over low heat, stirring occasionally, till rice is done and liquid absorbed, about 30 minutes.
(Add water during cooking if needed.)
