Mexican Cornbread Recipe
Ingredients
| Cornmeal | 1 Cup (16 tbs) | |
| Milk | 1 Cup (16 tbs) | |
| Oil | 1/4 Cup (16 tbs) | |
| Soda | 1/2 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Creamed corn | 1 Can (10oz) | |
| Jalapenos | 2 , chopped | |
| Hamburger meat | 1 Pound | |
| Onion | 1 , chopped | |
| Mild cheddar cheese | 8 Ounce, grated |
Directions
Brown meat with onion.
Mix meal, milk, oil, soda, salt, creamed corn and jalapenos.
Heat skillet to 400°.
Pour 1/2 of meal mixture into preheated skillet, then spread meat mixture over meal mixture.
Put grated cheese on meat mixture and top with remaining meal mixture.
Bake at 400° for 45 minutes.
Good served with pinto beans.
