Mexican Corn Recipe
This Mexican Corn recipe easily finds way to the top of my favorite list. The Mexican Mexican Corn is generally consumed as a Side Dish. Mexican Corn can be eaten by anyone following a Low Fat diet. Ingredients
2 tablespoons chopped green onions
1/3 cup chopped green pepper
1/3 cup chopped red pepper
1/2 cup chopped fresh tomato
1 tablespoon apple cider vinegar
1-2 tablespoons water
1 teaspoon chili powder
Pinch cayenne pepper (optional)
1 10-ounce package frozen corn, thawed, or 2 cups fresh corn kernels
1 teaspoon honey (optional)
2 tablespoons chopped fresh cilantro and/or fresh parsley
1 wedge lime
Plain nonfat yogurt for garnish (optional)
Directions
MAKING
1) In a large skillet, heat vinegar and water over medium heat and cook green onions, peppers and tomato in it for 5 minutes.
2) Cook the mixture for a short time after adding in chili powder and cayenne.
3) Mix in corn and sweeten with honey if desired.
4) Cook for 5 minutes, stirring occasionally and then flavor the mixture with cilantro and/or parsley.
SERVING
5) Sprinkle with lime juice and serve hot, garnished with a spoonful of yogurt.
