 Tomatoes- 2 lb, (1 kg), peeled, de-seeded and chopped
 Onion1
 Green chilli pepper1 To taste, deseeded
 Garlic1 Clove (5gm)
 Fresh oregano- 1 tablespoon (15 ml spoon) OR Dried oregano- 1 teaspoon (5 ml spoon)
 Coriander1 Tablespoon
 Olive oil3 Tablespoon
 Red wine vinegar3 Tablespoon
 Salt To Taste
 Pepper To Taste

Directions

MAKING
1. In a bowl, mix together all the ingredeints, until they are well belnded, then season to taste
2. Cover the bowl and chill it in the refrigerator for at least 2 hours or up to 3 days

SERVING
3. Serve the sauce chilled with fish
