Mexican Chicken Skewers With Spicy Yogurt Sauce Recipe
Ingredients
| Taco seasoning mix package | 1 , divided | |
| 6 boneless skinless chicken breast halves (about | ||
| 1 1/2 pounds), cut into 1 inch cubes | ||
| 1 large clove garlic | ||
| Salt | 1/4 Teaspoon | |
| Olive oil | 2 Tablespoon | |
| 1 cup DANNON® Plain Nonfat or Low fat Yogurt | ||
| Red bell pepper | 1 To taste, cut in to chunks | |
| Green bell pepper | 1 To taste, cut in to chunks | |
| Yellow bell pepper | 1 To taste, cut in to chunks | |
Directions
In a large bowl combine 3 tablespoons seasoning mix and chicken; toss to coat well.
Cover; chill 2 hours.
To make Spicy Yogurt Sauce, in a mortar and pestle or with a large knife press garlic and salt together until a smooth paste forms.
Place in a small bowl with olive oil; mix well.
Stir in yogurt and remaining taco seasoning mix.
Cover; chill 30 minutes before serving.
Thread chicken onto skewers alternately with peppers; grill over hot coals 10 to 12 minutes, turning occasionally.
