Mexican Chicken Recipe

Mexican Chicken is an amazingly delicious and easy to prepare recipe. Try it for once; you wont wish to try any other non-vegetarian dish for your parties!

Ingredients

 
3 1/2 to 4 pounds chicken parts
 
1 can pineapple chunks
 
1 tablespoon chili powder
 
2 bananas, sliced lengthwise
 
1/4 teaspoon pepper
 
1 ripe avocado, sliced
 
1/4 teaspoon cinnamon
 
1/2 pound seedless white grapes, in clusters
 
1 teaspoon salt
 
1/4 cup chopped onion
 
2 tablespoons cornstarch
 
1 cup pineapple juice

Directions

Place chicken pieces in 2 quart oblong pan.
Mix the seasonings, onion, and juice, pour over chicken.
Cover, cook in Radarange oven 12 minutes.
Spread pineapple chunks on top.
Turn dish 180°, cook 10 to 12 minutes more, covered.
Remove chicken and pineapple to serving dish; garnish with fruit.
Thicken pan gravy (about 2 cups) with 2 tablespoons cornstarch, cook 1 1/2 minutes; serve separately.
