Cheesy Mexican Casserole Recipe
Once you taste this Mexican Casserole recipe, I am sure you will always get hooked to it. The Mexican Casserole is made with Beef which can be easily found at any grocery store. It is one Mexican dish which will never fail to impress you or your guests. It is an effortless Main Dish. Ingredients
2 lb. ground beef
1 small onion, chopped
1 small can black olives, sliced
1 small can green chiles, chopped
1 can cream of mushroom soup
1 can Ro-Tel tomatoes, diced
1 pt. sour cream
Com tortillas
Cheddar and Monterey Jack cheeses, grated and mixed together
Directions
Preheat oven to 350°.
Brown ground beef and drain.
In large saucepan, mix together the next 7 ingredients and heat, stirring to smooth consistency.
Tear corn tortillas into bite sized pieces.
In a large casserole dish, layer corn tortillas, 1/2 ground meat, 1/2 soup mixture and 1/2 cheese and repeat for next layer.
Bake for 20 to 30 minutes or until thoroughly heated and cheese is bubbly.
