For the dough
 White wheat flour1 1⁄4 Cup (20 tbs)
 Soy milk1⁄2 Cup (8 tbs)
 Salt1 Pinch
 Egg white1 Large
 Active dry yeast1 Teaspoon

 Butter1⁄8 Cup (2 tbs), melted
For the frosting
 Vanilla extract1 Teaspoon

Directions

GETTING READY
1. Preheat the oven to 400 degrees F.

MAKING
2. In an electric mixer, add in the flour, soy milk, salt and mix well. Add in the dry yeast and continue mixing.
3. Add in the butter, brown sugar and egg white. Mix well.
4. On a floured board, place the dough and knead into a rectangular shape. Using a sharp knife cut this dough into half, then into quarter and finally into 8 small pieces.
5. Take one piece at a time and roll into a ball, making sure the cracks are sealed. Place these Mexican buns onto a parchment lined baking sheet.
6. In a small bowl, pour in the vanilla extract, powdered sugar and mix well.
7. Add flour and the egg white and mix well until there are no lumps. Put this frosting into a piping bag and seal tightly.
8. Pipe this frosting onto the Mexican buns in a circular motion.
9. Bake the buns in the oven at 400 degrees F for 12 minutes.
10. Once done, remove the pan and set aside to let the buns cool completely.

SERVING
11. Serve the Mexican buns with warm milk or coffee.
