Ingredients

 
1). 1 handful chopped fresh fenugreek leaves
 
2). 2 tbsp chopped cilantro
 
3). 2 cups rice
 
4). 1/4 tsp cinnamon powder
 
5). 1/4 tsp cardamom powder
 
6). 1/4 tsp clove powder
 
7). 1 tsp coriander powder
 
8). 2 green chillies (slit)
 
9). Salt to taste
 
10). 1 tsp ginger paste
 
11). 1/2 tsp garlic paste
 
12). 1 med. sized onion (finely chopped)
 
13). 1 tomato (Blanch and peel the skin, chop finely)
 
1 cup fresh/frozen green peas
 
2 tbsp melted ghee/oil

Directions

1. Mix all the powders (clove, cinnamon, cardamom and coriander) and keep it aside.
2. Soak rice for 1/2 an hour.
3. Heat ghee in a pan and add the onions. Fry on a medium heat till golden brown.
4. Add ginger garlic paste and saute for few seconds.
5. Now add the powder mixture and saute for about 5 seconds.
6. Now add the fenugreek leaves, cilantro, peas, green chilli and tomatoes. Add salt and cook till everything blends together and tomatoes become mushy.
7. Add 4 cups water and bring it to a boil. Check the seasoning.
8. Now add the rice (by draining water) and cover and cook on a low heat.
9. Stir casually and cook till all the water evaporates.
10. Serve hot with any curry or raita.

Easy to make and wonderful to taste. You could add other vegetables to up the health factor.

I too love this pulav. But I don't like getting the whole garam masala while eating. So I use powder. The taste is more or less the same.

I love Methi Pulao. The flavor is of fenugreek is so good. Instead of using powder forms, I use cinnamon, cardamom as a whole but since you suggest powder, am beginning to think if it gives a more even flavor!
