Merrie Olde Brandied Mincemeat Recipe
Ingredients
| Small navel orange - 1, quartered and seeded | ||
| Small lemon - 1, quartered and seeded | ||
| Apples | 8 Cup (16 tbs) | |
| Golden Raisins | 1 1/2 Cup (16 tbs) | |
| Seedless raisins | 1 1/2 Cup (16 tbs) | |
| Candied fruits | 1 Cup (16 tbs) | |
| Orange juice | 1 Cup (16 tbs) | |
| Packed brown sugar | 4 Cup (16 tbs) | |
| Cinnamon | 1 Tablespoon | |
| Nutmeg | 1 1/2 Teaspoon | |
| Cloves | 1 1/2 Teaspoon | |
| Allspice | 1 1/2 Teaspoon | |
| Beef - 1 pound, minced & cooked | ||
| Brandy | 1 1/4 Cup (16 tbs) | |
Directions
GETTING READY
1. In a grinder, add lemon, orange and grind with a steel blade.
MAKING
2. In a saucepan, add ground orange, lemon, diced apples, raisins, candied fruits, orange juice and bring to a boil, simmer for 15 minutes.
3. Add sugar, ground spices, salt and simmer for another 15 minutes. Add 1 cup brandy and simmer for another hour, until consistency is thick like a jam. Remove from heat and add ΒΌ cup of brandy.
4. Add minced, cooked beef and mix well.
SERVING
5. Use the mincemeat as filling for pies.
