Meringue Kiss Cookies Recipe
Ingredients
2 egg whites
1 cup sugar
1/2 cup semisweet chocolate morsels
1/2 cup chopped pecans
1/2 teaspoon vanilla extract
1/2 teaspoon grated lemon rind
Directions
Beat egg whites (at room temperature) until foamy.
Gradually add sugar, beating until stiff peaks form.
Gently fold remaining ingredients into egg whites.
Drop by teaspoonfuls onto cookie sheets lined with brown paper.
Bake at 200° for 1 1/2 hours.
Cool slightly on cookie sheets, remove cookies to wire racks to cool completely.
