Meringue Date Cake Recipe
Ingredients
1 pkg. date bar mix
1/2 c hot water
2 eggs .
1 t baking powder
1/4 c current or apple jelly
1 pkg. fluffy white frosting mix, prepared as directed
2 t sugar
Directions
Blend date filling with water.
Stir in crumbly mix, eggs and baking powder.
Pour into an 8-inch square greased baking pan.
Bake 30 minutes at 375° F.
Spread jelly on hot cake.
Top with mixture of prepared frosting mix and sugar, beaten until very stiff.
Be sure frosting touches sides of pan.
Return to oven and bake for 10 minutes at 400° F.
