Meringue Jam Cookies Recipe
Ingredients
1/2 cup sugar
6 tablespoons butter
1 egg yolk
1/2 teaspoon vanilla
1 tablespoon cream
1 1/8 cup cake flour
1 teaspoon baking powder
1/4 teaspoon salt
Tart jam or jelly
Directions
Cream butter well, add sugar and beat until light and creamy.
Beat in egg yolk and add vanilla and cream.
Sift flour, measure and sift with salt and baking powder.
Add to butter mixture and chill dough for 1 to 2 hours.
Roll dough until it is very thin.
Cut into oblongs; spread the cookies with tart jelly or jam.
