Menudo Recipe
Menudo has a great taste. Menudo gets its taste from beef mixed with onion and golden horminy, flavored with cinnamon. Menudo is inspired by many resturants around the world.
Ingredients
| 2 pounds tripe, cut in slivers | ||
| Water | 3 Quart | |
| A bout 2 teaspoons salt | ||
| 4 pounds thick meaty slices beef shank | ||
| Onions | 4 Large, chopped | |
| Garlic | 2 Clove (5gm) | |
| Hominy | 3 Can (10oz), drained | |
| Oregano | 1 Teaspoon | |
| 2 cinnamon sticks, each 3 inches long | ||
| Whole Cloves | 8 | |
| Relishes | ||
Directions
Put tripe into a deep pot; add water and 1 1/2 teaspoons of the salt.
Bring to a boil and simmer, covered, for 2 hours.
Add beef, onion, garlic, hominy, oregano, cinnamon, and cloves.
Simmer 2 1/2 hours more.
Cool, cover, and chill overnight.
Skim off fat and discard shank bone and connective tissue.
Cut meat in pieces and return to soup.
Simmer 30 minutes; salt to taste.
Ladle into large individual bowls, adding 1 or 2 tablespoons of each relish to every serving.

Simmer 2 1/2 hours more.
